INGREDIENTS
1 lb. of your favorite pasta
3 cups baby spinach leaves or arugula
2 cups fresh strawberries sliced
1 cup crumbled feta cheese
1/4 cup toasted almonds or pecans
1/4 cup TSO Strawberry Balsamic Vinegar
1/4 cup TSO Basil Olive Oil or TSO Single Varietal EVOO
fresh basil leaves to garnish salad
DIRECTIONS
Cook pasta according to package instructions, drain and rinse with cold water. Coat with a Tablespoon of Basil or Single varietal olive oil to keep from sticking together and toss.
Place cooled pasta in a salad bowl. Top with sliced strawberries, spinach or arugula or mix, pecans or almonds, feta cheese and toss.
Drizzle Strawberry balsamic and remainder of Basil or single varietal olive oil over pasta salad. Toss to coat salad evenly with balsamic and olive oil.
Sprinkle top of salad with fresh basil and serve!
