INGREDIENTS
8 count pack of biscuits
1 pound sausage (I use spicy)
1 cup shredded cheddar cheese
5 large eggs
¼ cup milk
2 cups of homemade gravy
(you can use a packet of peppered gravy mix)
Salt and pepper to taste
*Garnish with your favorite toppings, I used green onions and salsa.
DIRECTIONS
Preheat oven to 350 degrees.
Grease a 13×9 baking dish with non-stick cooking spray.
Cook the sausage until completely browned. Scoop out the sausage and save the grease for homemade gravy and a few sausage crumbles (unless using packet of gravy mix, then drain and set aside)
Cut each biscuit into 4 or 5 pieces and spread over the bottom of the prepared pan in an even layer.
Add the cooked sausage over the biscuit dough.
In a large bowl, whisk together the eggs and milk; add salt and pepper to taste, (I also added a dash or three of Worcestershire sauce) then pour the mixture all over the casserole dish and sprinkle with cheese.
Pour the prepared gravy on top.
Bake the casserole for about 40 minutes until puffed up and golden brown on top.
Let rest for 5 minutes before serving. Garnish with your favorite toppings.
